Every time I use this dressing, whoever I am feeding inevitably says, "great salad!" I suspect this is for two reasons: proper salad-to-dressing ratio and this dressing is flavorful without being overpowering. It pairs wonderfully with the flavors of simple greens, tomatoes, cucumbers, avocados, carrots, fennel, even potato salad. I've even used it as a dressing for roasted root vegetables. You could also use it as a simple marinade for chicken or steak.
And the best part? It's naturally gluten-free!

Cait's Can't Go Wrong Gluten-Free Salad Dressing
1/3 cup EVOO
1/4 cup apple cider vinegar and/or champagne vinegar
1 teaspoon honey
Juice from 1/2 a lemon
2 teaspoons Dijon mustard (optional)
Salt & pepper to taste
Combine all ingredients in a small bowl and thoroughly wisk. Make sure the dressing is emulsified just before pouring over the salad. Toss the salad, making sure no leaf goes untouched! Let sit for a few minutes before serving so the dressing can work it's magic.
